Barbacoa Street Tacos

Street tacos are supposed to be small and packed with flavor. The meat marinade, fresh cilantro, and sweet onion are the only garnish that it needs.

Barbacoa Street Tacos

white corn gf tortillas
1 c red onion, diced
1 c chopped cilantro
2 ½ lb chuck roast
3 tbsp ACV
2 tbsp minced garlic
3 chipotle peppers, chopped
3 tbsp lime juice
½ c beef broth
4 tsp cumin
2 tsp dried oregano
¼ tsp ground cloves
1 tsp salt
1 tsp pepper

Place chuck roast in a greased slow cooker. Whisk together vinegar, garlic, chipotle peppers, lime juice, beef froth, cumin, oregano, cloves, and salt and pepper. Pour over roast. Cover and cook on high 4-5 hours or on low 6-8 hours. Shred with two forks. Place a wad of shredded beef in every tortilla, then top with cilantro and onion.
