I’m not sure if there’s a formal name for the drink, but my neighbors from the Islands call it Warsh. I love this stuff. It’s like brown sugar limeade.


2 c filtered water
1 juiced lime
½ c grated ginger
2 tsp raw honey or raw sugar or brown suggar
fresh lime wedges


Bring the water to a boil and let cool slightly (still warm but not hot). Add the ginger and cover. Let sit for 5-10 minutes. Pour the mixture through a strainer into a large bowl. Add honey and lime juice, and garnish with freshly sliced lime wedges.
