Kitty’s Tom Kha Gai (Thai Coconut Soup)

This isn’t a tradition Tom Kha Gai, but it’s the way that I like it. Whenever I’m sick, this is my go to.

Kitty’s Tom Kha Gai

1 stalk lemon grass, bruised
2” piece ginger, sliced
5 tbsp fish sauce, +
2 cans full fat coconut milk
4 c chicken stock
3 tbsp lime juice
¼ c cooking sherry
1 tbsp sugar
salt & pepper to taste
1 c button mushrooms, sliced
2 c thin sliced chicken breast
rice or gf rice noodles
fresh cilantro
scallions (omit for FODMAP)


Pour coconut milk and chicken broth into a stock pot and bring to boil. Add the ginger, lemon grass, fish sauce (may need more), and chicken and simmer for 10 minutes until the chicken is cooked through. Add the mushrooms, lime juice, sugar and simmer for another 5 minutes. Serve with fresh cilantro and scallions with rice or gf rice noodles.
