Rich Cherry Pistachio Slow Cooker Oatmeal

I love breakfast for dinner when I’m not feeling well. I also love no muss holiday breakfasts. This is a wonderful meal full of amazing flavors, and bonus: it’s even better after a little sit in the fridge!

Rich Cherry Pistachio Slow Cooker Oatmeal
2 c milk (or whipping cream)
1/4 c sugar
1 tbsp butter, divided
1/4 tsp salt
1/2 tsp cinnamon
1 c gf quick cooking oats (or gf Irish Steel Cut Oats)
1 c dried cherries
1/2 c chopped dates
1/2 c chopped pistachios
coconut butter or butter for greasing

Grease the inside of crockpot with coconut oil or a small amount of butter. Put ingredients, including remaining butter, inside slow cooker and mix well. Cover and turn on low heat. Cook overnight or 8 hours on low. Stir before serving.
